The Michigan Restaurant Association in partnership with The Michigan Department of Agriculture and Rural Development will be providing free Specialized Processing Training.   This training is recommended for any food service operator that would like to request a variance from a Local Health Department for Specialized Processing specific to:  Canning, Smoking, Charcuterie, Sous Vide, Curing, Infusion, Fermentation and Pickling.   In order to engage in Specialized Processing, a variance including a HACCP plan must be approved by the Local Health Department that issues your food license and inspects your restaurant.  To sign up for this free class, please visit:
